A great vegan version of sushi. Inspired by a recipe on http://www.vegweb.com.

Recipe Ingredients for Nori Rolls

20 sheets nori
10 avocados
5 cucumbers, julienned
3 1/2 cups carrot, shredded
10 tbsp sesame seeds
5 tbsp rice wine vinegar
5 tbsp soy sauce
2 cups nishiki sushi rice

Recipe Directions for Nori Rolls

  1. Lay nori sheets flat and (very lightly) brush on vinegar.

  2. Mash avocado with the soy sauce.

  3. Spread avocado mixture onto each nori sheet.

  4. Add some cucumber, carrots, and sesame seeds to each nori sheet.

  5. Fold sides over on each nori sheet and roll. Serve with extra soy sauce.

  6. Each big roll can be cut into smaller sections for appetizers. Refrigerate first so that cutting is easier.
