thinned out version of old-fashioned mexican nopales with a little rice thrown in; I ate mine with tomatillo salsa on top

Recipe Ingredients for Nopales Soup

4 cups chopped Nopales
1/2 cup sliced onion
1 tablespoon minced garlic
4 cups fresh tomato
1/4 cup chopped cilantro
1/4 cup raw white rice
4 large egg whites

Recipe Directions for Nopales Soup

  1. Boil nopales until tender or use the jarred variety. PAM out a large skillet and saute the onion and garlic. In a blender, whiz up the tomatoes after roughly chopping them without adding extra water. Just smash them down with a meat mallet while they're in the blender with the blender not running.

  2. Put your drained, nopales in the skillet with the onion and garlic. Keep sauteeing. Toss in the tomato, the rice the cilantro and the egg whites. Stir so the egg whites blend in some. Serve with mexican queso crumbled on top if desired along with some tomatillo salsa.
