Recipe Ingredients for Nopales with Onion and Chile Guajillo

1/2 oz guajillo chiles (3 chiles), stemmed, seeded and torn into flat pieces
3 cloves garlic
15 oz diced tomatoes, canned
1 pound nopal
1 1/2 tbsp olive oil
1/4 cup onion, chopped

Recipe Directions for Nopales with Onion and Chile Guajillo

  1. Toast the chiles in a pan or on a comal until aromatic. Roast the unpeeled garlic until soft and blotchy, or simply use minced garlic. Combine chiles, garlic and canned diced tomatoes in a blender until smooth. Strain in a medium-mesh strainer.

  2. Cook onion in oil until browned. Add nopales and cook until most of the stickiness has evaporated. Add the chile mixture and 1/2 cup water. Simmer on low for 20 minutes.

  3. Serve with queso fresco, cilantro and warm tortillas or with beans and rice.
