Recipe Ingredients for Noodles with Ginger Peanut Sauce & Spinach

3 ounce Ramen Noodles, pork
1 tsp vegetable oil
1/2 tsp dry red pepper flakes
1 tsp fresh ginger, cut into matchsticks
1/4 cup peanut butter, reduced fat
2 tbsp soy sauce
2 cups spinach, torn
1/4 cup green onions, sliced

Recipe Directions for Noodles with Ginger Peanut Sauce & Spinach

  1. Cook the noodles according to package directions. Drain and keep warm; reserve cooking water.

  2. Heat oil in a skillet Add red pepper flakes and ginger. Cook for about 4 to 5 minutes. Remove and discard excess cooking oil.

  3. Blend peanut butter, 1/2 cup of the reserved cooking water, and soy sauce; heat and stir until hot, adding more cooking water if needed.

  4. Toss the ginger, noodles, spinach, and green onions with the peanut sauce. Serve immediately.
