An improvised but tasty anything-goes quick meal.

Recipe Ingredients for Noodle leek soup

1 tbsp olive oil
1 large leek
1 cup noodles
2 cups mixed vegetables, chopped
2 onions
1 pinch salt
1 pinch pepper
1 tsp tarragon
1 tsp dill
2 cloves garlic
1 liter water
1 cup heavy cream

Recipe Directions for Noodle leek soup

  1. Chop all vegs and prepare noodles according to instructions on packet.

  2. Saute vegs in oil, then add water and cream (more or less, according to taste).

  3. Simmer until vegs are tender but not mushy.

  4. Add noodles and seasonings, and serve. For variety add beans, poached egg or a little grated chese.
