Recipe Ingredients for noodle free lasagna

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
2 medium Squash, Summer, Zucchini, Includes Skin
1 bunch Broccoli
16 oz Organic Cremini Mushrooms Packaged
1 medium raw Bell Pepper Red
3 cup Newman's Own Marinara Sauce
12.3 oz Silken Tofu
14 oz Extra Firm Tofu
1 small Onions
4 clove Garlic
0.5 cup leaves, whole Basil, Fresh

Recipe Directions for noodle free lasagna

To make the noodles, preheat the oven to 350 degrees. Wipe baking pan with a small amount of extra virgin olive oil. Place the eggplant and zucchini in baking pan and bake for 10 minutes or until flexible but not completely cooked. Work in batches if necessary and set aside. While the noodles are baking make the nut-ricotta add silken tofu to food processor or high powered blender. Drain and squeeze dry the firm tofu by placing the tofu into a sprouted seed bag or cheese cloth and squeezing all of the liquid out of it. Add the dry crumbles to the food processor. Cut onion into quarters and add onion, basil leaves and garlic to food processor. Add salt, Italian seasoning and macadamia nuts. Blend until smooth and creamy. If you have someone with nut allergies you can omit the nuts and this will still taste great! Sauté veggies in a large sauté pan or wok for 5-7 minutes without water or oil. The water from washing the veggies should be enough to get the sauté going. Drain veggies. In a large baking pan spread tomato sauce to cover the bottom of the pan. Layer the eggplant along the bottom. Cover eggplant with ricotta mixture and add the sautéed veggies, cover with layer of tomato sauce and layer baked zucchini on top then spread the ricotta mixture onto. Finish by pouring the rest of the tomato sauce on top of the ricotta. Bake for 1 hour or until bubbly.
