A lasagna variation for low-carb enthusiasts

Recipe Ingredients for noodle free lasagna

1 lb extra lean ground beef
500 g ricotta
1 medium onion
3 cups mushrooms, sliced
1/2 cup red pepper
1/2 cup green pepper, chopped
796 ml can diced tomatoes
2 garlic cloves
700 ml pasta sauce
3 medium zucchini
1 tsp basil
1 tsp oregano
1 egg
1 tsp salt
1 tsp pepper
500 g shredded mozzarella

Recipe Directions for noodle free lasagna

  1. prepare as you would regular lasagna, layering first zucchini (sliced 1/8" thick), then sauce, then zucchini, then ricotta, then zucchini,the sauce then zucchini & top with mozza.

  2. Cover with foil

  3. Bake in preheated oven (375')for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.
