2 lbs potato
4 cups low sodium vegetable broth
4 cups water
1 medium onion
7 cloves of garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon olive oil
16 oz white kidney beans

Recipe Directions for Non-Dairy Potato Soup

  1. Saute onions

  2. add vegetable broth and water

  3. add diced pototoes

  4. add peeled garlic cloves

  5. simmer for 30 minutes

  6. put in blender or use immersion blender
