One serving = 1 manicotti. If you can find manicotti noodles that are not egg noodles, that would make it vegan. If you get low salt spaghetti sauce, that would reduce the sodium.

Recipe Ingredients for Non-Dairy Manicotti

2 pounds firm tofu
3/4 cups olive oil
2 teaspoons salt
1/2 teaspoon garlic powder
2 tablespoons olive oil
1/2 cup parsley
1 onion
16 ounces noodles, egg
5 pounds tomato sauce

Recipe Directions for Non-Dairy Manicotti

  1. Blend first four ingredients.

  2. Saute diced onion & parsley in oil. Mix into blended ingredients.

  3. Fill noodles with filling and cover with spaghetti sauce.

  4. Bake at 350 until bubbly hot.
