Recipe Ingredients for Nom Nom's Meat Loaf


the loaf:
2 lb ground beef, 93% fat free
1 stalk of celery
1 onion
2 cloves of garlic
2 eggs, large
2 cups breadcrumbs
16 oz Tomato Sauce No Salt Added

the sauce:
2 tbsp stone ground mustard
1 tbsp soy sauce
3 tbsp splenda

Recipe Directions for Nom Nom's Meat Loaf

  1. Chop the celery, onion, and garlic.

  2. Combine the beef, celery, onion, garlic, eggs, breadcrumbs, and *half* the can of tomato sauce. I use my hands to squish everything together.

  3. When fully mixed, place in a large loaf pan or a 9x13 casserole dish.

  4. Create a channel along the sides to drain the grease.

  5. Mix the mustard, soy sauce, splenda, and the rest of the tomato sauce in a small saucepan and heat gently.

  6. Pour half of the heated mixture over the loaf. Bake the loaf covered for 45 minutes.

  7. Take the loaf out, drain the grease.

  8. Add the rest of the sauce to the loaf and bake uncovered for 30 more minutes.

  9. Drain the grease again.

  10. Allow the loaf to stand for 10 minutes before serving.

  11. Make 8 equal servings.
