Recipe Ingredients for Noe Khauk Swe

300 grams chicken breast, skinned
1/3 tsp ground turmeric
2 tsp salt
1/4 cup fish sauce
1 1/2 cup low fat milk
10 onions,sliced
5 cloves garlic, diced
1/2 cup chickpea flour
2 hard boiled eggs
300 g noodles
5 tsp peanut oil
2 l water
1 tsp paprika

Recipe Directions for Noe Khauk Swe

  1. Put the chicken into a saucepan with turmeric and salt and just enough water to almost cover.

  2. Bring to the boil then reduce heat, cover and simmer until chicken is tender.

  3. Cool, then discard bones and cut meat into small pieces.

  4. Heat the oil in a pot. Put the crushed garlic and grounded ginger.

  5. When golden brown, put paprika , fish sauce and then chicken.

  6. Add water and heat until boil.

  7. Mix the chickpea flour with a cup of cold water.

  8. Add milk into the pot and when it comes to a boil, stir in the chickpea mixture.

  9. Cook and stir constantly until it thickens, taking care it does not become lumpy or stick at the base of the pan.

  10. Finely slice 3 onions and set aside to be served raw with the finished dish.

  11. Put the remaining onions and sliced boiled eggs into the dish .Boil until the onions become soft.

  12. Serve in a large bowl, with noodles and raw onions served separately.
