An aversion from two original recipes. You can load the soup with more vegetable to fill you up more without adding much calorie. One serving in this recipe is a very generous size of 2.5 cups.

Recipe Ingredients for (No)Cream of Broccoli

1 cup chopped carrots
1 cup chopped celery
3/4 cup chopped onions
29 ounce (2 cans) reduced-sodium chicken broth
1/2 teaspoon pepper
4 1/2 cups broccoli florets
1/2 cup potato, partially cooked
2 cups fat free milk

Recipe Directions for (No)Cream of Broccoli

  1. Cook and stir carrots, celery and onions in hot oil in large saucepan on medium-high heat 5 min. Add broth and pepper; stir. Bring to boil.

  2. Stir in broccoli and potato. Reduce heat to medium-low; simmer 10 to 15 min. or until vegetables are tender, stirring frequently.

  3. Puree the soup to your liking.

  4. Add milk cook until heated through, stirring occasionally.

  5. Note: you can add cheese to make the soup tastier.

  6. Note 2: Another option for potato is to use ~ 2/3 cup of flour mixed with 1 1/2 cup of water (in this case, reduce the chicken broth by about a can).
