Recipe Ingredients for No Sugar Banana Nut Bran Muffins

6 bananas, very ripe
3 cups flour
1 cup oat bran
3/4 cup wheat bran
1/4 cup flax seed
2 teaspoons baking soda
1/4 teaspoon salt
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1 1/2 cups buttermilk (see substitution)
1/2 cup olive oil
2 eggs
1/2 cup raisins
1/2 cup dried cranberries
1/2 cup coconut, shredded
1/2 cup diced canned peaches (no juice)
3 cups walnuts, chopped

Recipe Directions for No Sugar Banana Nut Bran Muffins

  1. Preheat oven to 350 degrees F.

  2. Mash bananas in mixer. Transfer to small bowl.

  3. In food mixer, mix flour, oat bran, wheat bran, flax seed, baking soda, salt, nutmeg and cinnamon.

  4. Beat buttermilk, extra light olive oil (or grapeseed oil) and eggs lightly in a measuring cup with a fork. Add buttermilk mixture to flour mixture and stir until moistened.

  5. Combine mashed bananas, rainsins, cranberries, coconut, peaches and nuts in bowl. Lightly fold into batter.

  6. Divide into 32 paper-lined muffin cups. Fill close to top.

  7. Bake 30 minutes or until done. Bake 20 minutes if using muffin top pan.

  8. Buttermilk substitution: (1 tablespoon + 1 1/2 teaspoon vinegar) + enough milk to make 1 1/2 cups.
