Recipe Ingredients for No Sugar Added Zucchini Banana Bread

1 cup white flour
1 cup wheat flour
1 cup rolled oat (Quaker Old Fashioned Oats)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1 cup egg whites
1 tablespoon canola oil
2/3 cup unsweetened applesauce
2 medium bananas, mashed (the riper, the sweeter)
1 teaspoon vanilla
2 cups shredded zucchini
1/4 cup chopped walnuts
2 tablespoons wheat bran

Recipe Directions for No Sugar Added Zucchini Banana Bread

  1. Preheat oven to 350 degrees.

  2. Whisk together white flour, wheat flour, oats, baking powder, baking soda, cinnamon and salt.

  3. In a separate bowl combine the eggs, oil, applesauce, and mashed bananas; mix well. Add the vanilla.

  4. Combine the wet and dry mixtures. Stir until just combined.

  5. Fold in the zucchini and walnuts.

  6. Pour into 2 lightly greased loaf pans (9x5-inch).

  7. Bake for 45-50 minutes or until a knife comes out clean.
