A great diabetic's snack cake or dessert - my nutritionist loved it for the taste, texture, and the low calories, as well as the 1 carb per serving.

Recipe Ingredients for No Sugar Added, Low Calorie Apple Crumb Cake

1 Cooking spray, vegetable
1 cup flour, unsifted
1/3 cup rolled oats
1/3 cup Splenda granulated
1/3 cup Splenda brown sugar
1 1/4 tsp cinnamon
1/4 tsp nutmeg
4 tbsp margarine, cold and cut in small pieces
1/2 tsp baking powder
1/2 tsp baking soda
1/3 cup apple juice or cider, unsweetened
1 1/2 tsp vanilla extract
1/4 cup egg substitute
1/2 lbs apples, granny smith, chopped

Recipe Directions for No Sugar Added, Low Calorie Apple Crumb Cake

  1. Lightly coat an 8"x8" square baking pan with the vegetable cooking spray. Set aside.

  2. Use a pastry blender or two knives to combine margarine, baking soda, baking powder, flour, oats, sugar, cinnamon, and nutmeg until it looks like coarse crumbs. Set aside 1/2 cup of this mixture.

  3. Combine remaining flour mixture with all wet ingredients, beating at medium speed with an electric mixer until well blended.

  4. Coarsely chop the apples, then fold them into the batter. Spoon into the prepared baking pan. Sprinkle top of cake with the reserved dry mixture.

  5. Bake 30-40 minutes at 350 degrees until the center springs back when lightly touched.

  6. Cool until warm and cut into 16 squares. Store loosely covered.
