This banana bread is made with Splenda instead of sugar. I manhandled the recipe provided in my Betty Crocker cookbook.

Recipe Ingredients for No-Sugar Added Date Banana Bread

1 1/4 cup Splenda
1/2 cup margarine, softened
2 large eggs
1 1/2 cups bananas, mashed ripe
1/2 cup milk
1 tsp vinegar
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1 tsp salt
1 cup dates, chopped

Recipe Directions for No-Sugar Added Date Banana Bread

  1. Move rack to low position so that tops of pans will be in center of oven. Preheat oven to 350. Grease the bottoms only of 2 8x4x2 pans or 1 9x5x3 with shortening.

  2. Stir the vinegar into the milk and let stand.

  3. Mix Splenda and margarine in a large bowl. Stir in eggs until well blended. Add bananas, milk mixture, and vanilla. Beat until smooth. Stir in flour, baking soda and salt just until moistened. Stir in the nuts. Pour into pans.

  4. Bake 8" loaves about 1 hr, 9" loaves about 1 1/4 hrs, or until toothpick insterted into middle comes out clean. Cool 5 minutes in pans on wire rack. Loosen sides of loaves from pans; remove from pans and place top side up on wire rack. Cool completely before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.
