Vegetables replace pasta in this dish, it is also meatless.

Recipe Ingredients for No pasta vegetable lasagna.

15 oz part skim ricotta cheese
16 oz mozarella cheese, shredded
2 cups tomato sauce
1 eggplant
3 squash
1 red pepper
1/2 cup egg beaters
1/4 cup fresh basil

Recipe Directions for No pasta vegetable lasagna.

  1. Thinly slice squash and eggplant lengthwise. Slice red pepper into strips.

  2. Beat egg substitute and combine with ricotta cheese and chopped basil.

  3. Spread a thin layer of sauce on the bottom of a caserole dish.

  4. Place a layer of eggplant and squash over suace.

  5. Place a layer of ricotta cheese mixture over vegetables and mozzarella on top of the ricotta.

  6. Repeat layers ending with sauce. Cover dish and bake in 350 degree oven for 30-45minutes, until bubbly.
