Eggplant / Zucchini Lasagna with Mushroom Bolognese

Recipe Ingredients for No Pasta Eggplant and Zucchini Lasagna, with Mushroom Bolognese

24 oz Eggplant
2 cup, sliced Squash, Summer, Zucchini, Includes Skin
34 oz Tomato Puree
24 oz Mushrooms
1 small Onions
4 clove Garlic
4 oz Mozzarella Reduced Fat Semi-firm Cheese
0.25 cup Parmesan, Grated Cheese
6 1tsp Olive Oil
1 full glass (6.0 fl oz) Wine, Table, Red
4 oz Tomato Paste

Recipe Directions for No Pasta Eggplant and Zucchini Lasagna, with Mushroom Bolognese

  1. Preperation

  2. Hydrate Procini in water

  3. Slice Eggplant / Zucchin into thin strips - lightly oil and salt

  4. Chop garlic, onion, celery

  5. Dice mushrooms (medley is better, - portabello, oyster, cremini, button)

  6. Cook

  7. Saute garlic in olive oil, then onion, celery.

  8. Add Mushrrom - cook until browning

  9. Remove and reserve any liquid in pan

  10. Add one can of tomato paste - carmelize

  11. Add red wine - scrap bottom of pan until clean - cook out all alchohol

  12. Add tomoato puree - stir to a boil

  13. Drain porcini in a cheese cloth - add porcini, AND the water it was draining in

  14. Add back any reserved mushroom liquid

  15. Add bay leaf, stir to a boil

  16. Reduce and simmer - approx one hour.

  17. Preheat Oven to 350

  18. LAYER LASAGNA

  19. Begin with some sauce on bottom of pyrex

  20. Add a layer of eggplant slices. Cover with thin layer of sauce, about 2 tbl of mozzoreall, and 1 tsp on parmesian

  21. Alternate Zucchini and Eggplant layers in same manner.

  22. Top with a layer of sauce, thin layer of mozz, and even layer of parmesian (for crusting)

  23. Cover with Aluminum, bake in oven for 45 minutes

  24. Remove from oven, uncover, and cook at 400 for another 5 minutes

  25. LET SETTLE before cutting
