Recipe Ingredients for No-Noodle Veggie Lasagna

1 medium eggplant
2 med zucchini
1 egg
3/4 lb. part skim ricotta cheese
1/4 cup fresh basil
1 /2cup parmesean cheese
4 cup marinara sauce
1 /2lb shredded part skim mozzarella cheese.
5 sprays cooking spray, divided

Recipe Directions for No-Noodle Veggie Lasagna

trim and slice eggplant and zucchini lengthwise in 1/4" thick slices.Coat 2 baking sheets with spray and place eggplant and zucchini on separate sheets and coat veggies with spray as well. Roast 8 min, turn over and roast for 7-10min more (no more than 20min total or they will get too soft). Remove from oven and set aside. Meanwhile, in a med. bowl, combine beaten egg, ricotta cheese, basil and 1/4c parmesan cheese and then set aside. To assemble Lasagna, coat bottom and sides of a 9x13" baking dish with cooking spray. Spread a thin layer of sauce ,1/4-1/3c on bottom of pan. Layer eggplant over sauce, useing all the eggplant even if you have to overlap them. Cover eggplant with half of marinara sauce and then spread half of the ricotta mixture on top, sprinkle with half of mozzarella cheese. Top mozza cheese with zucchini and cover with the remaining marinara sauce, then spread remaining ricotta mixture and then with remaining parmesan cheese. Bake in 400 degree F. oven for 35-40min. Remove from oven and let stand for at least 15-20min and then slice into 12 pcs. Note- the vegetables can also be sliced into 1/4" rounds instead of lengthwise.
