A mix of veggies, with egg plant as the noodles, low fat ricotta cheese, and some fresh mozzarella for decoration.

Recipe Ingredients for No Noodle Vegetable Lasagna

2 eggplants, sliced thin
24 oz pasta sauce
2 cups raw spinach
1 cup zucchini
1 cup squash
1 lb ground turkey breast
1 onion, diced
4 cloves garlic, diced
4 oz fresh mozzarella
1 pint part skim ricotta cheese
4 oz sliced mushrooms

Recipe Directions for No Noodle Vegetable Lasagna

Slice the body of 2 eggplants in thin pieces. Layer them in baking dish, and cook for 20 minutes in oven at 350F. While this is baking, brown the 1 diced onion, and 4 cloves of diced garlic in a pan. I use Pam Olive Oil spray to coat the pan. Then add the turkey, and lightly brown it. Add the jar of Newman's Sockarooni sauce to the turkey. In a bowl, rip up the 2 cups of spinach, and then mix with the pint of ricotta cheese. Remove all but the bottom layer of eggplant from the baking dish. Use a little less than half the ricotta mixture to cover this layer. Then use a little less than half of the pasta sauce/turkey mixture to cover this layer. Then take half of the squash, half the mushrooms, and half of the zucchini and position them as the 3rd layer. Use the rest of the eggplant to make the next layer, followed this time by the mushrooms, zucchini and squash, with the pasta sauce/turkey being last. Now thinly slice the 4oz of mozzarella and place on the top. The mozzarella will not cover the top, but will give you cheese but not a ton of calories. Cover with foil and bake for 30-45 minutes at 350, depending on how crispy you want your veggies.
