A light sourdough bread made with white whole wheat flour added for texture and bite. A great bread for toast or sandwiches.

Recipe Ingredients for NO KNEAD SOURDOUGH BREAD

14 ounces bread flour
2 ounces white whole wheat flour
1 ounce all purpose flour
13 ounces water
1 1/2 tsp. sea salt

Recipe Directions for NO KNEAD SOURDOUGH BREAD

  1. Add 14 ounces bread flour, 2 ounces white whole wheat flour and 1.5 tsp. sea salt to medium bowl. Whisk ingredients together.

  2. Add 1/4 cup sourdough starter to 1.5 cups purified or Spring water and stir well to dissolve starter.

  3. Add to flour mixture and blend thoroughly with a dough whisk (or large spoon) until all dry ingredients are incorporated. Cover bowl with plastic wrap and leave on counter for 18 hours.

  4. Scrape dough onto floured work surface, press out lightly into a rectangle and fold left 1/3 to center and then right 1/3 to center. Fold top 1/3 down and bottom 1/3 up. Let rest covered for 15 minutes.

  5. Lightly spray proofing basket and evenly coat with oat or wheat bran to prevent sticking. Shape dough into round boule or oblong loaf and place in basket.

  6. After one hour proofing, preheat round or oblong la cloche in 500 degree oven. Remove lid and gently deposit dough unside down in base and cover. Reduce temperature to 450 degrees and bake 30 minutes; remove lid. Insert instant read thermometer into center of loaf and continue baking until internal temperature reaches 200 - 205 degrees.

  7. Let cool completely before slicing.
