No Knead Rye Bread Recipe

adapted from Cook's Illustrated magazine 1 serving equals 1/8 of loaf

Recipe Ingredients for No knead rye bread

1/4 teaspoon yeast
1 1/2 teaspoon salt
1 tablespoon vinegar
10 ounces water
2 cups white flour
1 cup rye flour

Recipe Directions for No knead rye bread

  1. Mix dry ingredients, add water and vinegar. Stir til just mixed. Cover bowl with plastic wrap and let rise 8-12 hours. On floured surface gently knead/shape dough into a round ball. Only very light kneading--about 10 to 15 turns--is needed. Set on parchment paper sprayed with vegetable spray on a pan. spray top of loaf with vegetable spray and cover with the plastic wrap. let proof 2 hours.

  2. preheat oven and baking dish to 500 degrees. You can bake this in a covered clay cloche, or a 4-5 qt dutch oven with oven-proof lid. To bake, remove plastic wrap and carefully set the loaf on the parchment paper in your dutch oven or on bottom of cloche. Cover and put in oven, reducing heat to 425 degrees. Bake 30 minutes; remove lid and bake 20 minutes more. Cool on rack.
