The easiest I have found so far. NO NEED TO KNEAD :) The hand mixer takes it hard though so maybe try the "Kitchen Aid" Mixer (Example only, not intended as an advertisement). My husband and I like the crunchy exterior and we enjoyed the spice. I sifted six times,maybe excessive but I read somewhere that it was the proper way (normally I "cheat" and only sift 2x) Enjoy Try it for dessert with Vanilla ice cream,ice milk , or frozen yogurt (Sugar / Fat: free, reduced, etc.) I think for a treat the calorie expenditure was worth it...for me. Smaller slices-lasts longer-fewer calories at a time

Recipe Ingredients for No Knead Irish Spice Soda Bread

3 c. all-purpose flour
3 tsp. baking powder
1/2 tsp. salt
3/4 c. Splenda
2 eggs
1/2 c. margarine
1 c. milk,fat-free
1 c. raisins,seedless
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/4 teaspoon allspice

Recipe Directions for No Knead Irish Spice Soda Bread

  1. Sift together the flour, baking powder, cinnamon, nutmeg, salt, and allspice.

  2. In a separate mixing bowl, cream margarine and sugar.

  3. Add beaten eggs, milk, and sifted dry ingredients and mix until well blended

  4. Fold in raisins.

  5. Lightly sprinkle top with Splenda.

  6. Lightly grease 9x5x3-inch loaf pan (I used Pam)

  7. Bake in loaf pan 40 to 60 minutes at 350 degrees.

  8. Loaf should be golden and toothpick test maybe SLIGHTLY doughy but just...if it is like thick paste then add 5-10 minutes and test again.

  9. Cool soda bread in pan for 5 minutes, then turn out onto a rack to cool completely.
