Recipe Ingredients for No Hurry Vegetable Curry

2 large carrots
1 medium onion
3 garlic cloves
1 t coriander
1/4 t cayenne pepper
2 T curry powder
2 large potatoes
8 ounces green beans
15 1/2 oz can chickpeas
14 1/2 oz can diced tomatoes
200 g vegetable stock
1/2 c green peas
1/2 c unsweetened coconut milk

Recipe Directions for No Hurry Vegetable Curry

  1. Heat large skillet over medium heat. Add water (says to use oil but I didn't). Add sliced carrots and chopped onions, cover and cook until softened, after 5 minutes. Add garlic, curry powder, coriander, and cayenne, stirring to coat.

  2. Transfer to 3-4 quart slow cooker. Add potatoes, green beans, chickpeas, tomatoes and stock; cover and cook on Low for 6-8 hours.

  3. Just before serving, stir in the peas and coconut milk. Taste to adjust seasonings.
