Recipe Ingredients for No Hurry Vegetable Curry

1 tbs canola oil
2 large carrots
1 onion
3 garlic cloves
2 tbs curry powder
1 tsp coriander
1/4 tsp cayenne pepper
2 large Yukon gold potatoes
2 ounces green beans
450 grams canned chickpeas
14 1/2 ounces diced tomatoes
1 vegetable bouillon cube
1/2 cup frozen peas
1/2 cup coconut milk

Recipe Directions for No Hurry Vegetable Curry

  1. Saute carrots and onion in oil 5-10 minutes.

  2. Add garlic and spices.

  3. Combine everything in slow cooker

  4. Low for 6-8 hours
