Cupcakes I make for my son, who is allergic to eggs. Comes from "what's to eat" recipe book, by Linda Coss.

Recipe Ingredients for No-Egg Cupcake

2 cups sugar
3 cups flour
2 tsp baking soda
1 tsp salt
3/4 cup canola oil
2 tsp vanilla extract
2 tbs vinegar
2 cups water

Recipe Directions for No-Egg Cupcake

  1. Combine the dry ingredients.

  2. Then, add the rest of the ingredients and mix.

  3. Pour cupcake batter into paper cups 3/4s full.

  4. Bake for 20-25 minutes. Check with a toothpick to see if they are done. they don't get too dark in color, because there are no eggs.
