Recipe Ingredients for No Egg Banana Oatmeal Muffins

3/4 cup whole wheat flour
3/4 cup all purpose flour
1 cup oatmeal
1/2 cup brown sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup soy milk or skim milk
1/2 cup applesauce
1/2 tsp vanilla
1 cup mashed banana

Recipe Directions for No Egg Banana Oatmeal Muffins

  1. Preheat oven to 400 degrees F.

  2. In a bowl, combine flours, oatmeal, sugar, baking powder, soda, salt.

  3. In another large bowl, mix together milk, applesauce, and vanilla. Add mashed bananas and combine thoroughly.

  4. Stir flour mixture into banana mixture until just combined.

  5. Place in muffin tins (greased or lined with paper bake cups).

  6. Bake at 400 degrees F for 20 mins. or until lightly browned and toothpick comes out clean.
