Delicious and creamy, but without milk!

Recipe Ingredients for No-Dairy Potato Soup

4 oz garlic
1 cup leek
1/2 cup celery
1/2 cup broccoli
1/2 cup corn
1/4 cup white wine
3 red potatoes
1 cup vegetable broth
1/2 cup chicken broth
1/2 tbsp olive oil
3/4 cup soy milk
3 tbsp cornstarch
6 oz chicken

Recipe Directions for No-Dairy Potato Soup

  1. Saute chopped garlic, leek, celery, broccoli, and corn together in olive oil until softened.

  2. Add white wine and let simmer for 5 minutes.

  3. Add broths, hemp (soy) milk, cooked chicken, and chopped potatoes.

  4. Boil until potatoes are tender, add cornstarch to thicken.
