Recipe Ingredients for No Crust Spinach Pie

1/2 cup (lowfat) cheddar cheese
20 oz frozen chopped spinach (or 1 16oz pkg), thawed and squeezed dry
3 eggs (or 3/4 cup eggbeaters)
24 oz 1% cottage cheese (or 16oz)
3 green onions, finely chopped
1/2 tsp dried basil
1/2 tsp salt
1/8 tsp pepper
2 tbs cornstarch, divided
8 oz plain nonfat yogurt

Recipe Directions for No Crust Spinach Pie

  1. Preheat oven to 375.

  2. Spray 9" pie plate with cooking spray. Reserve 1T cheddar for topping.

  3. Mix spinach with next 7 ingredients, remaining cheddar and 1T cornstarch until blended. Spoon into pie plate.

  4. Combine yogurt and 1T cornstarch until well blended. Spread over spinach mixture. Sprinkle with reserved cheddar.

  5. Back 1 hour or until set. Let stand for 10 mins for easier slicing.
