No-crust quiche with mirepoix & cheese.

Recipe Ingredients for No-crust quiche

1 T flour
1 oz onion
1 oz green pepper
1 oz celery
1 oz reduced fat cheddar cheese, shredded
1/2 cup egg beaters
1/2 cup skim milk
1 pinch black pepper
1 pinch ground nutmeg

Recipe Directions for No-crust quiche

  1. Pre-heat oven to 350 degrees F.

  2. Lightly spritz small (16 oz) baking dish with olive oil spray.

  3. Layer vegetables in baking dish.

  4. Shake together flour and shredded cheese. Layer on top of veggies.

  5. In a bowl, mix up eggs, milk, and spices. Pour over other ingredients in baking dish.

  6. Bake until set (40-45 minutes).
