Recipe Ingredients for no- cream potato leek soup

4 medium Potatoes
150 g Leeks
2 tablespoons Olive Oil
3 tablespoons dry White Wine
1 teaspoon dried thyme
1/2 tsp Rosemary
2 g Bay Leaves
6 cups water
1 teaspoon Salt
1/4 teaspoon Black Pepper
1 cup Soy Milk

Recipe Directions for no- cream potato leek soup

  1. inse the leeks well then thinly slice.

  2. Peel and dice the potatoes.

  3. In a large stockpot, heat the oil over a medium-high flame.

  4. Add the leeks to the oil and sweat until they are softened, about 3-5 minutes.

  5. Pour over the wine and sauté for an additional minute.

  6. Add the potatoes and stir well to prevent sticking.

  7. Add the stock, salt, bay leaves, rosemary and thyme.

  8. Bring the soup to a simmer and cook until the potatoes are soft, about 20 minutes.

  9. Add the pepper and remove the bay leaves and thyme stems.

  10. Then blend with a hand immersion blender or a food processor until smooth.

  11. Once slightly cooled, stir in the soy milk.

  12. Adjust salt and pepper, if necessary.

  13. Garnish with truffle oil, chives, smoked gouda or toasted garlic? you name the taste.
