Recipe Ingredients for No-Bake Granola Balls

1 cup Old Fashioned Oats
1/2 cup Organic Coconut Flakes
3/4 cup rice krispies cereal
1/4 cup chocolate chips
1/4 cup ground flaxseed
1/8 cup sunflower seeds
1/8 cup Natural Pumpkin Seeds
1/3 cup brown rice syrup
1/3 cup Peanut Butter
10 dried pitted dates
1 tsp water

Recipe Directions for No-Bake Granola Balls

  1. Stir all dry ingredients together in a medium bowl until thoroughly mixed.

  2. Heat syrup & peanut butter in microwave until it begins to bubble (40 seconds in mine). Food process dates until a ball forms.

  3. Combine dates, syrup, peanut butter, and water. Mix thoroughly. Allow to cool slightly.

  4. Pour into dry ingredients and quickly stir until all ingredients are coated.

  5. Let chill in the refrigerator for half an hour. Once chilled, press into balls of whatever size you would like. (Mine were about 1″ in diameter. I use an ice cream scoop for consistency.)

  6. Store in an airtight container and keep refrigerated for up to 1 week.

  7. Makes about 18-20 balls.
