No Bake Cookies Recipe

Took a basic no bake cookie recipe and tweaked it a little to make it a bit healthier.

Recipe Ingredients for no bake cookies

1 cup sugar
3 tablespoons unsweetened cocoa powder
1/2 cup smart balance butter
1/2 cup skim milk
2 1/2 cups quick oats
1/2 cup peanut butter
1 teaspoon vanilla extract

Recipe Directions for no bake cookies

  1. In a saucepan bring, sugar cocoa and butter to a rapid boil for 1 minute.

  2. Remover from heat and add oats, peanut butter and vanilla, mix well.

  3. Working quickly, drop by teaspoonfuls onto waxed paper, let cool.
