Man, I love these... and NOT BAD FOR YOU.

Recipe Ingredients for No Bake Chocolate Oatmeal Cookies

1/4 cup and 1 Tablespoon of butter
1/4 cup cocoa
1 cup sugar
1/4 cup Skim Milk
3 tablespoons Peanut Butter
1 pinch salt
1 1/2 cups Oats

Recipe Directions for No Bake Chocolate Oatmeal Cookies

Combine butter, sugar, cocoa, milk, and salt in a large pan. Bring to a boil over medium heat and boil ONE MINUTE. Make sure it's a full minute and no longer than one and a half minutes. Remove from heat and add peanut butter. Once melted, add the oatmeal. Combine and quickly spoon mixture by cookie size mounds onto wax paper. They'll set up in about half an hour. To make them even lighter, use reduced fat peanut butter and reduced fat cocoa powder. You can't replace the sugar with a sweetener, because it needs the sugar to set properly. Otherwise, they'll never harden. Boy are these things addicting.
