A fresh creamy pie that is not as dense or rich as most cheesecakes. It is no-bake if crust and topping is purchased or made in advance. Any graham cracker crust could be used instead, but the bitterness of the pecans adds character to this pie. Most berry-type fruits can be used in place of the blueberries. Adjust sugar as needed for the sweetness of the fruit. Alternatively, any canned pie filling could be used, but may add more sweetness to the finished pie than is desired. A gluten free version can be made by eliminating the flour in the crust and increasing the amount of pecans.

Recipe Ingredients for No-bake cheesecake (blueberry topping)


Crust:
1 1/2 cups pecans, finely chopped
2 tbsp brown sugar
4 tbsp butter, melted
1/4 cup flour

First Layer:
1/2 lbs cream cheese
1/2 cup lowfat cottage cheese
1/2 cup powdered sugar

Second Layer:
1/2 lbs cream cheese
1/2 cup sour cream
1/2 cup powdered sugar
2 tbsp lemon juice
1/4 tsp cream of tartar
1/8 tsp lemon peel

Blueberry Topping:
2/3 cup blueberries
1/2 cup sugar
2/3 cup water
1 1/2 tbsp cornstarch
1/8 tsp salt
1 tsp lemon juice

Recipe Directions for No-bake cheesecake (blueberry topping)

  1. Combine crust ingredients. Spread in 9 inch pie pan. Bake at 350 degrees F for 10-15 minutes, or until lightly browned. Cool.

  2. Mix sugar and cornstarch for topping in saucepan. Add water and blueberries. Cook over medium heat for 20 minutes or until blueberries are soft and cornstarch has cleared. Will thicken as cooled.

  3. Whip ingredients for first layer until smooth, spread on cooled crust.

  4. Whip ingredients for second layer until light and fluffy. Spread on first layer.

  5. Spread cooled topping over pie. Chill.
