Recipe Ingredients for Niku Jaga (Pork and Potatoes)

4 potatoes, quarter
1 onion, slice
1 small carrot
7 oz pork, thinly sliced
3 cups water
5 tbsp sugar
1/2 cup mirin
1/2 cup low sodium soy sauce

Recipe Directions for Niku Jaga (Pork and Potatoes)

  1. Quarter the potatoes and soak them for a few minutes in cold water: this makes the starch soak off and prevent disintegration

  2. Slice the onion, Julienne the carrot (1 inch long), and chop the pork

  3. boil potatoes, water, sugar, soy sauce, and mirin

  4. when boiling, add the pork (gently) and spoon of the foam

  5. simmer on medium for 20 minutes or until potatoes are soy sauce colored. Stir in the onion and cook 2-3 minutes

  6. Add carrot, stir for a few seconds and then remove from the heat.
