Makes 6 servings



Just cheese, meat, and noodles. You can add any veggies you like in the layers. Suggestions: Eggplant, Squash, spinach.....ect. Serves around 6-8

Recipe Ingredients for Nikki's Basic Lasagna

1 lb. ground beef
2 cups low-fat cheese, shredded
1 cup cooked noodles
8 oz. low-fat ricotta
1/2 cup onion, diced
3 cups tomatoes, peeled, diced
2 garlic cloves, minced

Recipe Directions for Nikki's Basic Lasagna

  1. Brown meat in a large sauce pan. Drain; set aside.

  2. Caramelize onions and garlic in same pan. Add meat back in.

  3. Skin and dice around 3 cups tomatoes. Add to meat. Let simmer for 20 minutes. Add any spices you like. I use Basil, Oregano, red pepper, and a pinch of cinnamon.

  4. In a 13x9 baking dish place a layer of noodles. Spread 1/3 of the ricotta cheese on top. Then 1/3 of meat sauce, then 1/3 of the cheese. Add another layer of noodles and repeat from there, ending with cheese on the very top.

  5. Bake uncovered in a 350 degree oven for 30-45 minutes. until sauce is bubbling and cheese is nice and brown on top.
