Recipe Ingredients for Nigerian Masa

668 grams Rice Flour, White
3 grams Yeast
20 grams Sugars, Granulated
20 grams Salt, Table
3 medium (2-1/2" dia) Onions

Recipe Directions for Nigerian Masa

  1. use a 5% potash solution i.e. 20g potash in every 400ml of water, then filter. Use 20ml of this solution for every 250g of masa batter from the mixture of the above ingredients ? make as much as u need.

  2. Fermentation is carried out for about 10 hours.

  3. For frying, u can use the special frying pans for poached eggs, else, fry them like pancakes in a non-stick pan - not too much oil, it should not oversoak the masa
