Beef patties for quick lunches or dinners

Recipe Ingredients for Nigerian Beef Patties

1 kg flour
450 g margarine
2 tsp baking powder
1 tsp salt
3/4 cups water
2 tbsp flour
500 g lean ground beef
1 tsp olive oil
1 carrot
2 potatoes
1 onion
2 beef bouillon cubes
2 tsp thyme

Recipe Directions for Nigerian Beef Patties

  1. For dough, mix together flour and baking powder. Add margarine and mix until coarse crumbs form.

  2. Add enough water for dough to come together. Knead and roll out. Cut into rounds.

  3. Chop onions into small cubes.

  4. For beef filling, brown onions in oil. Add beef and brown.

  5. Cut carrot and potatoes into small cubes.

  6. Add 1/2 cup water and beef bouillion cubes. When beef is no longer pink, add chopped carrots and potatoes. Add enough water to cover all.

  7. Cover and let simmer.

  8. Once potatoes and carrots are cooked, add tbsp of flour mixed with cold water to thicken.

  9. Once thick, remove from heat and allow to cool slightly.

  10. Add beef mixture to each round of dough. Close and seal.

  11. Bake at 340F for 30 minutes.
