A slightly tweaked version of Nigella Lawson's Cornbread-topped Chilli Con Carne, which is found in her "Feast" cookbook. I've left out the cornbread topping, but often make scones to go with it.

Recipe Ingredients for Nigella's Chili Con Carne

500 g ground beef
400 g red kidney beans
400 g tomato and onion mix
1 clove garlic
1 tsp ground coriander
1 tsp ground cumin
1 tsp cardamom
4 tbs ketchup
1 tbs tomato puree
1 tbs cocoa
20 g Fresh chili

Recipe Directions for Nigella's Chili Con Carne

  1. Brown the mince (ground beef) in a large pot.

  2. Add the rest of the ingredients and bring to the boil.

  3. Turn down to low heat and simmer for 1 to 1.5 hours.

  4. Serve with your choice of starch and a salad.
