Great use of Thanksgivng leftovers!! We bake this a couple days after the holiday and leave it in the fridge for lunches.

Recipe Ingredients for Nicole's Turkey Noodle Casserole

16 oz whole wheat egg noodles
1 can chicken broth
1 cup turkey
1/4 cup carrots
1/4 cup broccoli
1/4 cup cauliflower
1/8 cup celery
2 cups 1% milk
1/4 cup cheddar cheese
3 tbsp butter

Recipe Directions for Nicole's Turkey Noodle Casserole

  1. Cook noodles according to package,drain.

  2. Bring broth and butter to a boil, simmer and add milk.

  3. Chop veggies and turkey.

  4. Add all to ingredients except cheese to a 9X13 casserole dish.

  5. Bake at 350 for 30 minutes stirring occasionally.

  6. Stir in cheese about 5 minutes before baking time is complete.

  7. There will be some liquid left in the bottom which is okay. Stir before serving and reheating. The liquid will help keep the noodles soft in the fridge.
