A delicious and nutritious skillet meal - served over rice

Recipe Ingredients for Nicole's Chicken with Asparagus and Red Peppers

1 lb chicken breast
1 lb asparagus
3 cups tomatoes
1 cup chicken stock
4 tbs balsamic vinager
3 bell peppers
1 cup onion chopped
2 tbs minced garlic

Recipe Directions for Nicole's Chicken with Asparagus and Red Peppers

  1. Roast bell peppers by cleaning and cutting peppers in half, skin side up and put on the very highest oven rack (on broil) 10 - 15 minutes until skins are completely black

  2. Remove from oven and place in a plastic bag (this will continue to cook the peppers and make the skins easy to remove.

  3. Let peppers cool for 5 - 10 minutes in plastic bag, when they are cooled enough to cut, remove skins and cut into small pieces.

  4. Brown chicken in a skillet with the onion

  5. When chicken is almost done, add 1 cup of chicken broth. Cook for 15 minutes on medium heat.

  6. Add minced garlic, asparagus, and roasted red peppers cook for another 10 minutes (or until chicken is completely cooked and asparagus is tender)

  7. Add in chopped tomatoes and balsamic vinager and cook for 2 more minutes.

  8. Place on a bed of brown rice and enjoy!
