Pineapple is untraditional but it really helps offset the canned-tuna flavor. Add boiled new potatoes for heft.

Recipe Ingredients for Nicoise-style salad

1 cup lettuce, Mesclun Blend
2 1/2 ounces tuna in water, drained
1/4 cup crushed pineapple , drained
3 black olives, diced
1 tablespoon capers, rinsed
2 tablespoons red onion, diced
1 Roma tomato, quartered
1/4 cup green beans
1 1/2 teaspoons extra virgin olive oil
1 teaspoon white wine vinegar

Recipe Directions for Nicoise-style salad

  1. Flake drained tuna into a small bowl and drizzle on olive oil and vinegar. Lightly mix in pineapple, olives, capers and onion.

  2. Spread out lettuce on a plate or in a large pasta bowl. Dump tuna into center. Artfully arrange tomatoes, green beans and potatoes around the tuna for presentation.

  3. Mix to eat.
