Makes 8 side dish servings or 4 main dish servings - 4 servings of this makes 4 full meals. I got this recipe from Ross Dobson's book "Market Vegetarian," which is an AMAZING new cookbook I picked up at Crate & Barrel. Yum! This version doesn't include the tuna & anchovies, but of course you can add them in :)

Recipe Ingredients for Nicoise-style brown rice salad with fresh herbs

4 eggs, softboiled
7 oz. green beans
12 oz. brown rice
1/4 c. olive oil
1 garlic clove, crushed
2 tbsp freshly squeezed lemon juice
7 oz. cherry tomatoes, halved
3 oz. olives, pitted and halved
1/8 c. (1 small bunch) fresh chives, finely snipped
1/4 c. (1 large handful) fresh parsley, chopped
1/4 c. (1 large handful) fresh basil leaves
1/4 c. (1 large handful) fresh mint leaves
1/8 c. (1 small handful) fresh tarragon leaves
1 pinch sea salt
1 pinch freshly ground black pepper

Recipe Directions for Nicoise-style brown rice salad with fresh herbs

  1. Put the eggs in a small saucepan & cover with cold water.

  2. Set over high heat and bring to a boil.

  3. Cook for 3 minutes, then rinse under cold water.

  4. When cool enough to handle, peel and halve (longwise), and set aside.

  5. Cook the beans in boiling water for 1 minute.

  6. Drain and put in a bowl of cold water.

  7. Put the rice in a strainer and rinse well under cold running water.

  8. Transfer the rice to a large saucepan and add sufficient just-boiled water.

  9. Set the pan over high heat, return the water to a boil, and cook the rice for 10-12 minutes until it is tender but retains some "bite."

  10. Tip the rice into a strainer, rinse under cold running water, and drain well.

  11. Put the rice and drained beans in a large bowl and add the oil, garlic, and lemon juice.

  12. Stir until the rice is coated in the oil.

  13. Add the tomatoes, olives, and herbs, toss to combine and season to taste with salt and pepper.

  14. Arrange the egg halves on top to serve.
