Vegetables, potatoe and tuna with an oil and vinegar dressing

Recipe Ingredients for Nicoise Salad

4 oz Extra Virgin Olive Oil
2 oz Vinegar red wine
1 clove Garlic
2 tbsp Basil, Fresh
1/2 tsp or 1 packet Mustard, Prepared, Yellow
1/4 tsp Pepper, Black
1 head (5" dia) Lettuce, Butterhead
8 oz Potatoes
8 oz Beans, Snap, Green
3 large Egg, Whole
1 medium raw Onion Red
2 tomato Tomatoes, Red, Ripe
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
7 oz Tuna, White, Canned In Water, Drained Solids

Recipe Directions for Nicoise Salad

  1. Make dressing

  2. Scrub, boil, peal and slice potatoes

  3. Cook beans

  4. Layer in cooked potatoes and beans in shallow dish

  5. add 1/2 of dressing and mix until beans and potatoes are coated

  6. Refridgerate

  7. Slice tomatoe and eggs in wedges

  8. Slice red onion thin

  9. Arrange lettuce on plate, then arrange rest of vegetables and egg and tomatoe wedges

  10. Mound tuna in centre, pour rest of dressing and add olives
