From "The Mediterranean Diet Cookbook" by Nancy Harmon Jenkins. I didn't get "sauce" as much as a caponata-type texture of soft onions, garlic, tomatoes, and herbs. Serve with a hearty greek salad.

Recipe Ingredients for Nicoise Chicken with Tomatoes and Black Olives

2 tbsp olive oil
1 1/2 cup onion
2 garlic cloves
1 tsp dried thyme
3/10 cup parsley, chopped
1 lb boneless, skinless chicken breast
14 oz. tomatoes, canned
3/10 cup white wine
3/10 cup olives
3/10 cup lemon juice

Recipe Directions for Nicoise Chicken with Tomatoes and Black Olives

  1. In one tbsp oil, saute the onion and garlic until soft.

  2. Add the chopped parsley. Crush and add the thyme.

  3. Cook for a couple more minutes. Pull from heat and set aside.

  4. In the remaining tbsp oil, brown the chicken breast, 5-7 minutes per side over med. high heat.

  5. Drain, chop and add the tomatoes. Add the wine. Cook until liquid is reduced by about half.

  6. Add the reserved onion-herb mixture, olives, and lemon juice. Cook for 5 minutes.

  7. If chicken is not done (should be 165 F), remove and slice. Then add back to pan and cook with the "sauce."
