Nick's Old Fashioned Tapioca Recipe

This is NOT a diet food. Tapioca pudding at its finest.

Recipe Ingredients for Nick's Old Fashioned Tapioca

1/2 c tapioca
2 c 2% milk
2 c heavy cream
2 eggs
1/2 c sugar
1 tbsp sugar
1 tsp vanilla

Recipe Directions for Nick's Old Fashioned Tapioca

  1. Soak pearls in 2 c tepid water for 8-12 hours, strain.

  2. Place 2 c milk and 1/2 c heavy cream in double boiler, heat just until no longer chilled, add soaked tapioca.

  3. Stir well while heating to avoid clumps, heat over medium until small bubbles form along the edge.

  4. Cover and allow to cook over low heat stirring occassionally until very thick.

  5. Separate yolk from white, beat yolks with sugar until pale yellow in color.

  6. Add small amount of hot tapioca to yolk mixture to temper. Add yolk mixture to tapioca in 2-3 installments.

  7. Continue to cook tapioca over med-low heat for an additional 15 minutes.

  8. Beat egg white until stiff peaks form.

  9. Whip heavy cream with 1 tbsp of sugar and vanilla until soft peaks form.

  10. Remove Tapioca from heat and begin to fold egg whites into tapioca in 4 installments.

  11. Fold in whipped cream in 4 installments.

  12. Serve warm or chilled.

  13. Serving size is 1 cup, of creamy heaven!
