Fantastic alternative to ice cream! (Vegan)

Recipe Ingredients for Nice Cream

2 medium (7" to 7-7/8" long) Bananas
240 g (1 c) Vanilla Almond Milk
2 tbsp. Almond Butter

Recipe Directions for Nice Cream

  1. Slice and freeze bananas.

  2. Put sliced and frozen bananas, almond milk, and almond butter in a blender. Puree, turning off motor and stirring a few times, until smooth and creamy. Pour into two bowls.

  3. At this point, you can either go ahead and serve them, or you can put the bowls in the freezer for approximately one hour to get a more ice cream-like consistency.

  4. This is a fairly versatile recipe. You can prepare it, then put it between graham crackers and refreeze it for an hour or so for nice cream sandwiches; use unsweetened non-dairy milk rather than vanilla-flavored for a lower-calorie version; use chocolate non-dairy milk and 1 Tbsp. vegan non-dairy cocoa powder for a chocolate version; or use another frozen fruit (such as strawberries) rather than bananas for a different flavor altogether. I actually prefer it as-is with almond butter, but Mister Me really liked it with peanut butter. Just keep in mind that any variations will alter the calorie counts!
