A healthy meatless lasagna that tastes wonderful.

Recipe Ingredients for Newman's Own Lasagna Primavera - Adjusted

8 oz whole wheat lasagna noodles
3 carrots
1 cup broccoli
1 cup zucchini, sliced
1 yellow squash, sliced
20 oz frozen chopped spinach
8 oz part-skim ricotta cheese
8 oz part-skim mozzarella cheese
35 oz marinara sauce

Recipe Directions for Newman's Own Lasagna Primavera - Adjusted

  1. Bring 3 quarts water to a boil in a 6-quart saucepan over high heat. Add lasagna noodles and cook 5 minutes. Add carrots; cook 2 more minutes. Add broccoli, zucchini and yellow squash and cook the final 2 minutes or until pasta is tender. Drain well. Squeeze liquid out of thawed spinach. Combine spinach with ricotta cheese.

  2. In a 3-quart rectangular baking pan, spread 1/3 of the Newman's Own Marinara Sauce. Line pan with lasagna noodles. Put half of the veggies, spinach mixture and mozzarella cheese on the noodles. Pour half of the remaining marinara sauce over these layers. Repeat layers and top with remaining sauce.

  3. Bake uncovered in a 400 degree oven approx 30 minutes or until hot in the center. Let stand 10 minutes before serving. (Casserole may be prepared up to 2 days before baking and refrigerated, covered, until 1 hour before baking. If cold, bake for 1 hr @ 350 degrees.)
