A simple egg salad recipe popular in New York City! Serve chilled!

Recipe Ingredients for New York City Egg Salad

12 eggs, hard-boiled
6 tbsp miracle whip (not mayonnaise)
2 scallion, minced fine
1 pepper to taste
1/2 tsp garlic powder
1/2 tsp dry mustard

Recipe Directions for New York City Egg Salad

  1. To hard cook eggs, place eggs in enough cold water to cover completely, bring to a rolling boil over high heat; then reduce heat to a lower medium boil for an additional 12 minutes. Promptly chill eggs in ICE WATER to chill promptly so egg yolks remain nice and bright yellow.

  2. Remove shells from eggs, chop with a clean stainless steel knife. In a medium bowl mix together chopped eggs, onion, celery, miracle whip, and pepper.

  3. Great as a single dish, or in a sandwich, or served with crackers!

  4. Always serve VERY chilled.
